Ingredients:

2 tbsp olive oil

1 onion, diced

2 cloves garlic, minced

1 zucchini, chopped
-
1 red bell pepper, sliced

100g green beans
-
1 tomato, grated
-
1 tsp paprika
-
1/4 tsp turmeric or pinch of saffron

250g short-grain rice
-
700 ml vegetable broth
-
Salt & pepper to taste

Lemon wedges to serve
Instructions:
- Heat olive oil in the pan, sauté onion and garlic.
- Add zucchini, pepper, and green beans. Cook 5–7 minutes.
- Stir in tomato, paprika, turmeric/saffron. Cook for 3 minutes.
- Add rice and stir to coat.
- Pour in hot vegetable broth. Spread vegetables evenly and do not stir again.
- Simmer for 20 minutes or until rice is cooked and broth absorbed.
- Let rest 5 minutes. Serve with lemon.
