Serves: 4
Cooking Time: ~45 minutes

Ingredients:

  • 2 tbsp olive oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 zucchini, chopped

  • 1 red bell pepper, sliced

  • 100g green beans

  • 1 tomato, grated

  • 1 tsp paprika

  • 1/4 tsp turmeric or pinch of saffron

  • 250g short-grain rice

  • 700 ml vegetable broth

  • Salt & pepper to taste

  • Lemon wedges to serve

Instructions:

  • Heat olive oil in the pan, sauté onion and garlic.
  • Add zucchini, pepper, and green beans. Cook 5–7 minutes.
  • Stir in tomato, paprika, turmeric/saffron. Cook for 3 minutes.
  • Add rice and stir to coat.
  • Pour in hot vegetable broth. Spread vegetables evenly and do not stir again.
  • Simmer for 20 minutes or until rice is cooked and broth absorbed.
  • Let rest 5 minutes. Serve with lemon.
